Recipe by Priyanka Sastri:

Mumbai’s famous Baida Roti, usually made chicken and mutton keema but I made it with paneer and trust me its delicious

  1. Maida
  2. Salt
  3. Water
  4. Oil
  5. Crumbled paneer
  6. Chopper onions
  7. Chopped tomatoes
  8. Ginger garlic paste
  9. Chopped green chillies
  10. Chilli powder
  11. Turmeric powder
  12. Garam masala powder
  13. Chopped mint
  14. Chopped coriander
  15. Eggs

Make the dough of the roti by mixing 2 teaspoons oil and salt in the maida and adding some water…make sure the dough is soft…keep it aside for 30mins

Take some oil in a pan and add chopped onions…add tomatoes and green chillies ..add salt…once done add the ginger garlic paste…add turmeric powder..chilli powder…add the crumbled paneer …mix well…add garam masala powder and add chopped mint and chopped coriander…keep the filling dry

Making the roti
Roll out thin rotis and spread it on a tawa…make sure the gas is put on low flame else the thin roti might get burnt….put a generous amount of the filling in the centre …break an egg …stir it with a fork and pour it over the filling….fold in the roti four times …from all sides….add some oil and wait for the roti to get nicely brown ….

Your paneer baida roti is ready…serve with hot coriander chutney or raita.
